Throughout the day, we carry out many activities, one of the most essential being food preparation. Beyond providing energy to perform daily tasks, proper nutrition supplies the body with essential nutrients required for growth, maintenance, and overall well-being. In this case, we are focusing on one of the most commonly consumed food categories: processed meats. According to the Mexican Meat Council, processed meats are defined as products that have been “subjected to at least one additional processing or preparation step, such as grinding, adding ingredients, or cooking, which changes their appearance, texture, or flavor.” This means they go beyond simple preparation methods and involve chemical or industrial processes.
One of the most common additives used in processed meats is sodium nitrite. Experts explain that this compound is used to “cure” meat, giving it a distinctive color, a characteristic flavor, and a longer shelf life. Additionally, nitrites help prevent the growth of harmful bacteria, making the products safer to store for extended periods.
Despite these benefits, health authorities such as the Agency for Toxic Substances and Disease Registry have warned about the potential dangers of nitrite consumption. Scientific analyses suggest that nitrites can contribute to the development of certain types of gastrointestinal cancer in both humans and laboratory animals. This occurs due to chemical reactions between nitrites and other substances in the body, which can result in the formation of carcinogenic compounds.
While some individuals argue that there is not enough evidence to confirm this risk, experts point out that there have been documented cases in which both adults and children showed concerning health symptoms after being exposed to high levels of nitrites. These findings highlight the importance of moderation and awareness.
Consuming processed meats occasionally is unlikely to cause immediate harm. However, frequent and excessive intake over time may negatively impact health and increase the risk of serious illnesses. For this reason, it is advisable to limit the consumption of processed meats and prioritize fresh, minimally processed foods as part of a healthier and more balanced diet.

Public health organizations worldwide continue to emphasize moderation rather than complete elimination. The key lies in balance: limiting processed meats, increasing the intake of fruits, vegetables, whole grains, and staying informed about how everyday food choices affect the body.
