Even when tightly sealed, these meat packages can still leak small amounts of meat juices, dripping onto the food below and contaminating it.
Recent research has found that even the outer packaging of raw meat can contain dangerous bacteria.
In a large study conducted by the Health Protection Agency and published in the Journal of Food Protection, 3,662 samples of pre-packaged raw meat were tested to determine the level of bacterial contamination on the outer packaging—the part that people commonly touch when sorting or retrieving food from the refrigerator.
The results showed that Salmonella was detected on two samples, while Campylobacter appeared on more than 1% of the packaging, particularly from chicken and poultry meat. In addition, traces of E. coli were found on approximately 4% of the packaging.
This type of contamination is easily overlooked when organizing your refrigerator, but there are steps you can take to minimize the health risks.

Place raw meat on the bottom shelf of the refrigerator (in an airtight container/dish to prevent leaks), and place ready-to-eat foods or leftovers on the higher shelves to prevent bacteria from dripping or splashing onto them. This simple arrangement significantly reduces the risk of cross-contamination.
